In every known joint malady, there is an inflammatory involvement to one degree or another. This inflammation may be caused by a whole host of different reasons. Whatever the cause, inflammation is the primary factor for pain and joint immobility. The body produces many of its own chemical agents that are used to “switch on“ an inflammatory response, as well as chemical agents that inhibit inflammation. These can be substances called prostaglandins, other substances called cytokines, and also a third group of compounds called free radicals.

The most significant and easy to manage of these chemical agents are fatty substances called prostaglandins. Prostaglandins are chemicals manufactured in our bodies from fats. They are involved, among other things in activating or regulating the inflammatory response in our bodies. Many pharmaceutical anti-inflammatory drugs work by directly influencing prostaglandins or the chemicals in the body that manufacture them.

There are three main types of prostaglandins: series 1, series 2 and series 3. Series 1 and 3 are very powerful anti-inflammatory agents that can quickly and effectively reduce inflammation and pain. Series 2, on the other hand, actually instigate the inflammatory response and its associated pain.
The good news, however, is that we can manipulate which of these our body makes the most of.
The raw ingredients for the manufacture of prostaglandins in the body are fats. A diet high in saturated fat – the type found in many meats, dairy produce etc – will cause the body to manufacture a great deal more of the series 2 variety which, as we know, only really serve to promote inflammation and pain.
Conversely, a diet high in poly and mono unsaturated fats from food sources such as seeds, oily fish, olive oil and so on, will encourage the body to produce the series 1 and 3 prostaglandins that manage and minimise the inflammatory process. Our body will take the fats we consume in our daily diet and feed them through a series of chemical reactions. Depending upon the type of fat we consume, and its unique chemical structure, a specific inflammatory mediator will arise. Aside from manipulating the raw materials that the body uses to make prostaglandins, there are foods that we can eat which contain powerful chemicals that actually block some of the chemical processes involved in prostaglandin manufacture. Isn’t nature amazing?

JOINT HEALTH RECIPES

Pineapple, Celery & Ginger Smoothie Rainbow Salad

INGREDIENTS:
1/2 large fresh pineapple
2 fresh celery stalks
2.5cm piece of fresh ginger root

METHOD:
1. Prepare the pineapple by cutting off each end. Then, slice off the skin in a downward direction. This minimizes waste. Remove “eyes” from the flesh of the pineapple, and then cut half of the flesh into manageable chunks.
2. Chop the celery stalks into small pieces.
3. Peel the ginger and chop finely.
4. Place all the ingredients into a blender, along with a tiny amount of water, and blend into a smooth fragrant drink.

Rainbow Salad

INGREDIENTS:
2 slices of red cabbage
1 carrot
1/2 red pepper
1 handful of baby spinach
Small handful of parsley
For the dressing:
1 clove of garlic
1 teaspoon honey
2 teaspoons dark soy sauce
1 tablespoon extra virgin olive oil
1 tablespoon Viridian Joint Omega Oil

METHOD:
1. Prepare the salad by shredding the cabbage, grating the carrot, finely chopping the pepper, and adding to the whole baby spinach leaves and parsley.
2. Prepare the dressing in a small bowl. Finely chop the garlic, add a pinch of salt and all the other wet ingredients. Mix well, and pour over the salad. Toss the salad well, and serve.

Anti-inflammatory Curry

INGREDIENTS:
1 tablespoon olive oil
2 red onions, thinly sliced
2 large cloves of garlic, finely chopped
1 teaspoon freshly grated ginger
2 green chilies, thinly sliced
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon black mustard seeds
1 heaped teaspoon turmeric
800g sweet potato, diced with skins left on
375 ml vegetable stock
150g spinach, coarsely chopped
Large handful of fresh coriander leaves, coarsely torn
1 tablespoon toasted flaked almonds
1 tablespoon Viridian Joint Omega Oil

METHOD:
1. Heat the oil in a large saucepan and cook the onion, garlic, ginger and chilli.
2. When the onion has softened, add all the spices and heat until they are becoming fragrant.
3. Add the sweet potato and stock and simmer for about 15-20 minutes until the sweet potato is soft. At this point add the spinach.
4. Once the spinach has wilted, the curry is ready to serve with coriander leaves, topped with
flaked almonds and a drizzle of Viridian Joint Omega Oil. It is best served with brown rice to increase its nutritional profile further.
